Recipe of the Week: Turkey Sausage-Gnocchi Soup

With the cooler fall weather upon us, I decided to find a new yummy soup recipe.  I found one from Cooking Light and loved it!  It has a little spice to it, but you can always choose a sausage with less spice.  Oh, and to answer what Chris asked me as soon as I told him about the recipe, gnocchi is kinda like a small potato dumpling.



1 (4.5 ounce) link hot turkey Italian sausage – *I actually used about 8 ounces to make it a little heartier.
2 cups water
1 (16-ounce) package vacuum-packed gnocchi (found on pasta aisle)
1 (14-ounce) can fat-free, less-sodium beef broth
1 (14.5 ounce) can Italian-style stewed tomatoes, undrained and chopped
1/2 cup grated fresh Parmesan cheese

-Remove casings from sausage.  Cook sausage in a large Dutch oven over medium-high heat until sausage is browned, stirring to crumble.
-Add 2 cups water, gnocchi, broth, and tomatoes to pan and bring to a boil.  reduce heat, and simmer 4-5 minutes or until gnocchi float to the top of pan.
-Sprinkle with Parmesan cheese

This was a great addition to a fabulous fall evening!
