Recipe of the Week: Dark Chocolate and Cherry Brownies

With my most recent blog post about satisfying my sweet tooth, I thought I would share a dessert recipe tonight.  Although it is not under 100 calories like some of my other suggestions, it is still pretty low considering it is a rich dessert.  You can check out all the nutritional facts at the bottom of the recipe.  And, once again, this is one I picked up from Cooking Light.

 

 

Ingredients:
Cooking Spray
3/4 cup all purpose flour
1 cup sugar
3/4 cup unsweetened cocoa
1 teaspoon baking powder
3/4 teaspoon salt
1/3 cup cherry preserves
1/3 cup water
5 tablespoons butter
1 large egg, lightly beaten
1 large egg white
1/3 cup semisweet chocolate chips
Powdered sugar (optional)

Instructions:

  • Preheat oven to 350.  Coat a 9-inch square pan with cooking spray.
  • Combine flour, sugar, cocoa, baking powder, and salt in a large bowl; stir with a whisk.
  • Combine cherry preserves, water, and butter in a small saucepan and bring to a boil.  Add to flour mixture and stir well.
  • Add egg and egg white; stir until smooth.
  • Stir in chocolate chips and then pour into pan.
  • Bake at 350 for 25 minutes.
  • Garnish with powdered sugar (optional).

155 calories (per serving, makes 16 servings)
